The water cant escape from the bottle unless air can flow in to take its place. the surface tension on the water keeps air from moving inward. This explains how he can put toothpicks inside the water while its upside down because its not enough to break surface tension and also how he can snap and cause the water to fall cause he jerks the bottle and breaks surface tension allowing air to fill the vacuum.
